You sear it at a very high heat for a minute or two on each side to sear it. Help make a nice and edge keep the juices in. In my pic those have only been in the cast iron maybe 3-4 minutes. Still very raw on the inside. Then I put in oven and bake. Not broil. At 250 degrees. Using a therm you take them out at 129-230 and let rest for about 10 minutes. The bake time is roughly 30 minutes.

But why you do it is cooking at a low temp helps the meat get tender and nice and juicy.
