I'm cooking a chili for a vegetarian girl today. I make a great chili but it's great with beef and I don't drain the fat. I know mushrooms are a good idea for textures, but how do I add fat? I think butter is okay for her diet, any better idea?
Also general cooking without meat thread I guess.

Why not make something that isn't generally centered around having meat in it? There are plenty of vegetarian dishes that are good in their own right without being a "vegetarian version" of something with meat.

Mostly because I wanted her to taste more what real chili tastes like instead of the sloppy Joe tomato focused stews most people make, and I happen to have some chili paste made up. I've cooked for and with her many times before (it's our Netflix and chill) and this was something new that came to mind

Fry your spices in whatever oil you do choose, ghee might be good. It won’t impart a buttery taste that you might not want but will still be more like beef fat than a vegetable oil. Frying the spices will give them a bit more depth that is missing from the meat fat
