I find this food really overrated. I went to some famous one in North Carolina at I think Chapel Hill. Mama something’s. Anyway, I had had loads of recommendations and was with a group of people so ordered one of everything off the menu including what seemed like some outside barbecue thing that was happening that day (iirc a Sunday).

Anyway, I just found it utterly forgettable. It had all these great sounding names and the way it’s served is interesting, but the food itself was insipid at best to almost inedible. Almost no flavour, no particular spicyness or visual appeal. I think I half assumed in my head it would be similar to Caribbean food (which is excellent) but not at all. The cultural cuisine equivalent of that relative who can’t cook but you don’t want to hurt their feelings by telling them so you rave about their crockery and table setting instead.

And it wasn’t only here - I went to another supposedly famous one in the Bronx in New York and it was the same experience. Bland, boring, overrated, dull, uninteresting.

Nice sounding in principle but I’m afraid the reality is just a dud.

Black man here. Niggas don't know shit about spices. They just throw a bunch of whatever in whatever they're making for flavor, but there isn't any nuance or attempt at interesting complexity. It's still typically better than midwestern white food though, because they understand that fat and spices are worth something. I've met a lot of white people who believe in not seasoning food at all while cooking.

"lacks spice" refers to lack of seasoning, not lack of spiciness. Most soul food is flavourfull, but not especially spicy until you get into Louisiana, where domesticated peppers became more popular as ingredients.

Authentic carribbean jerk barbecue is actually quite spicy and delicious and uses many of the same seasonings as Indian food except you substitute chilis with scotch bonnets.

Usually when people are praising Soul Food, they mean barbecue. American Soul Food is typically fairly mild, fatty fried and breaded affairs. American barbecue runs the gambit from sweet and savory to spicy.

Cajun food is really the spicy food of the south. Soul food is often dressed with hot sauce by customers after plating, but in general it's not cooked with a lot of hot pepper spice.
