Does such a food/meal exist? I go straight to uni after work and only have 10 minutes to eat inbetween. I can keep food cold in the fridge at work, but don't want to waste time reheating it in a microwave

wat do

Chickpea and black bean cold salad is the first thing that came to my mind, you can really put anything in there,it's rather nutricious and if you custom it to your liking it's pretty damn delicious.

make a big batch and you can hae it for like a week and make single servings in plastic countainer etc.

The beans/peas have to be socked for a bit before being boiled if you use dry one (much cheaper) else if you're using canned ones i would suggest cleaning them and boiling them for 2-3 minutes just to be on the safe side.

I would probably use these diced vegetables:
Tomatos ( possibly removing the inner mushy part)
Cucumbers
jalapenos or green pepper
coriander
red (or any colored) onion

the dressing would be
3/9 vinegar
2/9 lemon juice
4/9 olive oil

salt and pepper to taste.

I'm kind of a professional cook and don't really use recipe so these numbers are coming outta my ass but that's how I would do it best.
just make sure there's 50%+ beans 50%- vegetables and the consistency will be pretty decent

Overnight oats are delicious and can be nutritious enough if you don't mind carbs.

Also Cold Soba if you can get that.

One bowl meals. Maybe tuck it into glass canning jar. Layered or mixed grain salads. Think about chicken or tuna topped salads that are composed of marinated veggies, beans, grains.
Poach chicken breasts, cube, or tear apart a grocery rotisserie or buy grilled sliced chicken at the grocery. Can be any protein of course. Always make an extra serving when cooking at home, and slice into next day's lunch.
Think salads minus the lettuce itself, honestly. Cole slaw kale and cabbage mixes you buy can turn into 3 lunches, just portion the dressing into it the day of, and add your protein. Make them all fresh with cilantro, fresh lemon, just one mix-in there. Couscous, wild rice mix, bulgur wheat, whole wheat pasta, soba, any grain is filling. Bean salads can be limey and mexi, southern style, or they can go lemony cheesey greek. Enjoy with fork, or with pita chips or scoops.

I'll often make a plain chicken salad with 4-5 chicken breasts poached, hit them with lemon juice as they cool and you chop them, and for 3 days I'll do different mix-ins. Day 1, just lemon, mayo, green onion. Day 2, more lemon juice, curry powder, mango chutney, an apple or raisins, mayo or yogurt. Day 3, maybe some pickles, mayo, mustard, or dill. Vary whether you eat it in bread, or just knife and fork. Add a chopped or sliced cucumber. Or enjoy on crackers.

10 minutes can be a super smoothie with frozen fruit, chia, yogurt, bananas, PB, whatever you like. Freeze your smoothie in a ziploc and thaw about 15 mins before you put in your cup, or toss in a vacuum water bottle, bust it up with your straw if still semi-frozen. Add a granola bar if you need more satiety.

Last time I made this salad it turned out good, but looked nothing like your picture. It looked all soggy and dark, should I just rinse the beans more or did I do something else wrong?

>> No.12926099

>>12926066
don't over cook the beans, and rinse them in very very cold water to help the beans retain their firmness, don't mix too harshly or you will break the vegetables and the beans.

Try to remove the mushy inside of the tomato also and don't put too much dressing, just make sure you mix it well before eating as the dressing will fall on the bottom of your bowl.
