Since people primarily stop eating meat for ethical reasons, it makes sense that they would still eat the foods they liked from before if they could. Being very healthy or being a great cook isn't the motivation for the vast majority, and while things that are typically meatfree by default are usually tastier than trying to use lots of substitutes, that isn't really the point. Also, lots of highly processed substitutes such as "chicken" nuggets are about as good as the meat version. Sometimes people just want the "meaty" taco, not the bean burrito.
