ALL THE new world beans are sort of similar. good, but similar. i am partial to garbanzo beans in salad, and indian dishes. nice texture. i want to try lupini beans, from the lupin flower. but yes, of the new world beans, black are great, esp. the color. but, have you tried flageolet? french new world variety. and cannelini are nice too.

Most commonly though I'll eat cannellini beans as they're in commercial baked beans.

These are my personal favorite. I just ate a massive bowl of them. They're very creamy and silky. They make the smoothest refried beans, too. They're a massive improvement over pinto beans. I cook them with serrano peppers and garlic. I added dried guajillo chilies to the last batch. It was very good. Highly recommend adding some kind of dried chili in addition to the serranos and garlic.

I eat beans almost every day, usually cannellini or navy beans.

I like to cook them in stock and spices till they're starting to fall apart a bit and forming a thick sauce. Chicken stock and some Spanish hot paprika is just the nicest thing for some white beans. Beef stock and cumin is great for dark ones.
