ate a snapping turtle as a kid. it reminded me of corned beef in both texture and flavor, if memory serves. not sure how it was prepared, but despite having it's head nearly blown off by my father, the thing really refused to die. heart was beating for like a half hour outside the body and it was basically walking around with no head whatsoever

Tastes like a combination of tuna, turkey and beef, listed in order of strongest to weakest flavour.
Make a dark roux from lard or bacon grease and compound it with tomato paste, finely minced onion, lots of brown paprika and a little garlic. Set aside.
idk how to clean and cut turtle; I buy it already done for me, so I'm gonna assume you get it the same way. Saute cut-up turtle in lard/bacon grease until coloured, but not cooked through, then add laurels and stock. What sort of stock? That really depends. Fish, chicken or a blend of the two is best, but any would be nice so long as it's plain. This means it will likely need to be homemade. Fish is easiest, since you can use fish tea (dried anchovies steeped in hot water), but a properly made chicken stock will give a better texture to the stew.
Anyway, bring to the boil then lower heat to maintain a simmer and cook several hours, skimming scum as it forms, until meat is tender.
Add the compounded roux and dissolve to thicken.
Adjust salt to taste and stir in lots of freshly picked thyme.
Serve with rice and a bottle of malt vinegar. You can use lemon, if you'd prefer, but I like the vinegar.
It's best eaten with some not-too-sweet vegetable side dishes, like collards, stewed okra (which can also be added to the turtle stew, if you'd rather do it that way) or red bell peppers and lima/fava beans braised with bacon.

A note: some people add carrot to this. I do not. Carrot is very sweet when cooked and I think the sweetness doesn't match well with the turtle meat, but you do you, boo. Maybe you'll like it that way.
