It's like mustard in that it takes a cultured tongue to appreciate. Plus, blue cheese may have benefits to health which are not completely understood. The penicillium responsible for the veins may not produce penicillin, but certain proteins in the cheese have been found effective against other germs.
Also, it adds a strong umami funk that wakes up that chicken wing. But, if people are comfortable with their simple condiments of ranch and ketchup, let them enjoy.
