Alright /ck/, let´s have a thread for all those who has given up on meat

Starting off with Tunesias gift to the world: Shaksuka

First off, cut up 2 onions and some garlic and put it in a pan with oil. Add in some salt to help break down the onions faster

Add 1 red bell pebber, some chili and some paprika

When the ingredients are reduced to about half size, add in 2 cans of tomato or some regular tomatoes.

Then add more salt, black pebber, basil and cumin, taste to judge the amounts

When satisfied with taste, add 6-7 eggs on top, in a shape like pic related. Put the lid on the pan, and let it cook on medium high for about 10 minutes.

When done, add some herbs on top, my favorite being spring onions.

Remember, always have something on the side for the shaksuka. I prefer bread and a homemade salad

Hijacking this thread
I’m hosting a dinner party soon and the group I’m hosting is primarily vegetarian, with a few FODMAPs thrown in for good measure. I normally end up doing a ratatouille or tajine or some other kind of vegetable stew for the main when it’s this group but I want to do something cool and different for mains. Any suggestions?
Currently I’m planning to do
Bread with homemade dips
Some kind of soup (likely carrot + sweet potato)
Stuffed capsicum entree
Warm couscous and pumpkin salad
Main???
Panna cotta or something equally easy for dessert

I like it making it with fresh tomatos, and eating it with toasted bread.
Also, cooking the eggs for 10 mins sounds way too long. Wouldn't that harden the yolk?

quiche is usually a good choice and it's retardedly easy to make if you skip the pie crust.
alternatively au gratin potatoes. simple, delicious and filling and looks like a main course.
idk what a fodmap is though.

For those who are in need of a boost i've got this small nutritious recipe which contains B11 / B12 and of course iron.

> Grab a bowl
> add about 100 grams of cooked Spinach ( chopped)
> add about 100 grams of tomato sauce ( cooked)
> add about 100 grams of cottage cheese
> Add 50 grams of crushed salad cheese ( Feta is a option as well )
> sprinkle generously with yeast flakes

Voila, it might sound simple but it might get you back on your feet. On top of that it's very tasty.
