It’s simple but takes a long time.

Simmer whole chicken in water with an onion with the top and bottom cut off for 30 minutes. Remove chicken and broth from pot. Now toast rice, a small amount of orzo and a can of chick peas in butter for 2 minutes, then add the broth. Simmer for 20 minutes. Meanwhile tear all the meat off the whole chicken into bite sized pieces. Once rice is done, serve by adding chicken to the bottom of a bowl, then rice on top and flip it onto a plate. Add pepper, salt and whatever seasonings you want. Serve with pickles and vegetable dishes. Boom, Turkish chicken pilaf, aka tavuklu pilaf.

For a faster recipe, use store bought chicken stock and fry a few chicken breasts before cutting them into pieces.

A little smoke is fine, masses of foul-smelling smoke and scorched, discoloured oil is what to avoid.

With a steak in the pan you shouldn't get ever get that hot, it's just when you preheat empty that there's a big problem with the pan overheating.

Oil fuming is generally bad for health and flavor reasons. If you're searing really hot, like for a steak, you oil the meat for that reason. If it's a stew or something, just don't let it fume for too long. It honestly shouldn't be fuming much at all, that's probably unnecessarily hot for whatever application. Use a proper oil for the job, butter, unless clarified, will burn really easily.
