this, but doing it entirely from scratch involves removing the seeds and skins of fresh tomatoes which is pretty aids. so a decent compromise is to start with plain tomato paste (should be 1 ingredient) as a base, still very convenient but you get a ton of flexibility with what spices, how watery you want to make it, how much salt, etc.
