I’d give borscht a shot, it’s pretty decent and damn hearty on a cold fall or winter day.

>1 cup of red cabbage, shredded
>1 large beet, julienned
>1 large onion, julienned
>1 carrot, julienned
>2 large red potatoes, diced
>1 parsnip, julienned
>2 cloves of garlic, minced
>1 quart of beef stock
>1/2 cup of red wine vinegar
>salt
>pepper
>bay leaves
>fresh parsley
>fresh dill
>sour cream
Sauté the potatoes, carrots, beets, and parsnips in butter over a medium heat, seasoning them with salt and pepper. When the potatoes are half cooked, add the onions, cabbage, and garlic. Cook until just tender. Add the vegetables to a Dutch oven and pour the beef stock and vinegar over them. Add additional salt and pepper to taste along with two bay leaves and about 2 tablespoons of fresh parsley. Give it a good stir. Cover and bake at 350 for one hour. Serve hot garnished with sour cream and fresh dill.

For soups and stews I generally avoid mince. If you want to add beef I suggest using either skirt steak or those chunks of chuck roast butchers sell labeled as “stew meat”. Cut it into slices if you chose skirt steak. Just season it with salt and pepper, sear it in a pan by itself, and add it with the vegetables when everything goes in the Dutch oven.

here in bulgaria we have meatball soup, if you want to use mince.

for the mince - salt, sunflower oil and breadcrumbs and whatever seasonings you like. we use parsley or savory. we typically use pork here, but if you want to use beef, add some fatty meat too, like fatback or rib meat or slanina/salo

for the soup
>celery root or stalks, either works, it's just a different flavor
>carrot
>potato
>half an onion, or one small-ish onion
>red pepper (green works too but red has a nicer color)
>eggo
>yoghurt
>thin round noudles

take the egg and the yoghurt out of the fridge

form the meatballs, then roll them in flour. they should be small, about ye big, like in pic.

then at the bottom of a pot heat some sunflower oil, add the chopped veggies and sweat them for a bit until they release juices. then pour in boiling water over the veggies, then salt the water. then add meatballs. cook for about half an hour, then add noodles.

then, in a bowl, whisk one egg with a couple of tablespoons of the yoghurt.

then when the noodles are done, take the pot off the stove. after another 10 minutes use a ladle to add some of the slightly cooled soup stock in the bowl with the egg and yoghurt mix. you're doing this so the temperature difference between the yoghurt and the soup isn't so large that the egg forms curds. after that, pour the egg and yoghurt mix into the pot, all the while stirring. then top it off with some fresh parsley and serve.

you can use whatever seasonings you like to season the soup. most common here is savory.
