I was actually just thinking about this earlier today. Escoffier and a lot of French chefs are French, and French anons are pretentious as fuck and aren't going to tell you how to recreate the dishes; they're just basic bitch recipes, and are meant as a reference for anons who trained in professional kitchens. JC is a lot more modern in her attempt to make classical French cuisine accessible to the home cook, but it's still pretty dated if you came up on Good Eats. I've only cooked maybe half a dozen things out of it, but my favorite cookbook is still The French Laundry. It's French techniques, but Keller breaks down 3 Michelin star cooking like he's assuming you're an idiot. It may seem like there isn't much under the sun, but modern cookbooks have gotten so much fucking better than old school shit.
