Please help guys. My mom is allergic to beef so she'll buy bison ny strips. Their pretty good but not that tender. I know thats just the nature of the meat but there has to be some way to cook these things right. I usually cook mine medium rare with a butter baste. Again, pretty good but i feel like it could be better. You guys have any experience/advice? Maybe some sort of aging process?
