Geez, that does rub and deep scoring does look tasty. Chunk that up and enjoy with some toothpicks while having a cold beer, maybe some gouda, while smoking the rest of the dinner.

I had fried bologna a couple of times, but many years ago, and I think it was glazed with bbq or mustard. It is literally the exact same spice and grind as the link recipe to make a hot dog. And mortadella too, just well, no yummy pistachios. That'd be good fried or grilled as well.
