So I randomly got put in charge of grilling for 6-8 coworkers today, they want hotdogs and hamburgers.

It's been a really really long time since I've grilled since I mostly just get takeout, can anyone give me any basic tips or things I should try to remember so I don't fuck it up?

You literally cannot fuck up hotdogs. Just throw them on and let them get a good crispy skin with some nice dark grill marks, wala. Burgers are just toss on grill, flip and add cheese, keep these a little darker to ensure they cook thoroughly.

Keep the grill on medium to medium high heat. Burgers and dogs are the easiest to make but you don't want to fuck it up by burning the shit out of everything. Just relax and have fun.

Fire up one side hot and the other, if any, less hot. After a few minutes of being lit, close the lid and let it all heat up for 10 minutes.

Easiest way to cook hotdogs is to get a disposable aluminum bread pan, doubled up. Dump a few beers into it, a lot of black pepper, and chop half an onion. During the grill heatup, bring it to a boil and then move it to a cooler spot and add the hotdogs. The idea is they can stay in there and poach indefinitely. When you need one, pull it out and grill it until done.

For hamburgers be organized. Before you light the grill you need the patties shaped, the condiments ready, the buns accessible, the cheese accessible, salt and pepper accessible, etc. Put the patties on a non-paper plate, with each layer separated by aluminum foil.

Make a limited number of items at a time. Say 3 dogs or burgers. Start by toasting the 3 buns, set aside. Now cook the meat. Season the burger patties once after flipping. When the meat is done, set aside for a few minutes to rest before you give them away. Go slow and steady and never get frustrated, it’s grilling, it should be relaxing and you being the grillman, will set the tone.

Nah, you can’t fuck up the hotdogs this way, like having cold centers and burned exteriors. Plus you get beer-cooked onions for free.

Being organized to a fault and limiting in-flight items eliminates the risk of things like burning/wasting all hamburger meat as you’re scrambling around.
