Do I actually need a pizza stone to bake pizza?

no

>> No.12779368

If you use a regular baking sheet, the bottom crust will be kinda soft and un-crispy. It's not a big deal, it's still pizza.

the pizza pan can be heated before putting the pizza on top. that makes it crispy

Why don't frozen pizza boxes recommend that? They just say don't use a pan and put it directly on the rack.

A flat sided cookie sheet is adequate. A pizza peel like you have pictured buys you some distance from actual coals on fire in a giant brick oven rocking 800F or more. At home, the point of a stone is that it can absorb quite a bit of that oven heat before the dough hits it and simulates a brick oven just a tad better, a well done crust in the middle, rather than some sog.

No, you can use a cast iron pan

Cause poor people buy frozen pizza. It's not just a convenience food, it's just inferior. It's the demographic. Most everyone else with taste or money isn't doing dominoes either, they're going to a local pizzeria/family italian restaurant with better ingredients and more deliciousness.

I have some air pillow insulated cookie sheets that just have a 1 sided lip to hold it, and it slides off nice, and of course, you could use cornmeal if you wanted some slippage to help it along, like a real pizzeria.
If I'm making calzones which is what I'm usually doing, with dough from my grocery deli, I'm making usually 4-6 at once, I'll actually stretch and fill the dough creations on top of their own piece of parchment paper. I don't want the soft pillow-like raw dough calzones to wobble and burst open in the transfer process. The parchment smokes a bit right at the end of the cooking process, but it's not bad. Also, the stone stays clean, and I'm able to do batches without any burning cheese if there were leaks.

Frozen pizza's dough won't fall through the grates of the oven like a raw pizza would. It can sustain itself and crisps up excellently just on the rack.

Not really. I preheat my iron tray to 220C. Make my pizza on a parchment paper and slide it on the heated tray. Pic related is the last pizza I finished like 30 minutes ago. You could use an iron sheet that’s a few millimeters thick, heat it about 1 hour before putting the pizza in the oven and you can get a great crust.

I use a big pan. Preheat stove plate to highest heat. Assemble pizza in pan. Place pan on stove top. Crust bubbles up from the bottom. When the crust is halfway baked I place it in the preheated oven directly under the grill radiator.

reminder, cooking pizza at home is retarded. The whole point is that it was cooked in a pizza oven. You might make a tasty pizza but thinking you'll do better than a local pizza (not chain) is just brainless.
