Good turnaround on ingredients. Basically a fair gamble, though. Your average person is gonna fill up on cheap sides like potatoes, springrolls, boiled veg, etc. Meanwhile, people trying to game the system are still only going to find the more expensive proteins are still cheap things like sausages, roast, bone-in chicken, etc. Even crab legs are dirt cheap when bought in bulk.

Restaurant also saves on serving staff, and everything is batchmade or premade.

It's much less labor cost because the servers are just selling you drinks and prepping large quantities of food is more efficient than cooking every meal to order. Also, 90% of people don't go into a buffet with the mindset, "it's all you can eat, so I'm going to starve myself beforehand and eat all the most expensive items to get my money's worth". I actually find buffets really interesting. Most people have never actually been to a really good buffet. The thing is that people who go to decent buffets aren't trying to game the system, so that one guy who avoids all the cheap carbs and just eats 8 plates of crab isn't even making a dent in the profits.

Personally I dislike buffets because for how I eat, they're nearly always more expensive than just ordering a la carte.
I don't want to hoard expensive things, I want to hoard delicious things and they're not always expensive. I'll also want some variety since that's the point of a buffet anyway.
The biggest reason I dislike buffets though is that they're literally a waste of money unless you overeat. If you eat a sensible portion size like I try to most of the time, you're eating one plate of food that isn't fully loaded and that would be way cheaper a la carte.

I dislike buffets because people serve themselves plates piled high with the weirdest shit (i.e. mashed potatoes, a brownie, grapes, chicken, rice, 3 pieces of broccoli, 1 crunchy taco) and leave like 30% on the plate, and repeat the process.

That and one time I got crazy food poisoning from crab legs. I'm not allergic to crab so I wonder wtf the chunks did to it or how long the crabs had been spoiled

Over the long course, most buffets don't benefit at all. You'd think the model of food variety and affordable prices would provide a sound enough economic model... but nope, they'll eventually go under. (I'm talking about individually-owned establishments here. Casino buffets are subsidized by the house winnings, and corporate buffets like Golden Corral make their money back via their supply chains.)

The problem is too many people turn into massive Jews as soon as they step in the door and must get their "money's worth" even though most buffets (at least around here) cost about the same as a Burger King lunch. How do you expect to survive when people drop their humanity at the door and turn into a swarm of locusts?

It's like if they go into the casino, they must count cards and leave with a big bag of money in order to feel good about being there. Or they must stay on welfare leeching off the system to the point where the country faces economic ruin because they drain the government coffers without providing any economic return.

Those same people use those same tactics in buffets to the eventual detriment of the business itself. Because they're not there to just to have lunch or dinner. They're there to satiate an inferiority complex that resides in the gaping chasm where a soul should be.

I went to the bacchanal buffet last month.

At $55 + tax + tip, I expected higher quality/cost items. What I got was good quality items of typical international foods. From Dim Sum and pad thai, to pizza and fried chicken, most of the items felt like I was getting a standard restaurant, just all you can eat.

Also, the crab was hard to eat and the beef was not particular great.

I might skip breakfast if I'm going to a lunch buffet but that's about it. I always think it's silly when people say you can only eat meat at a buffet because it's the best value. It's not like it really matters in the long run, it's one meal, and you're missing out on plenty of tasty food by doing that. Went to a _huge_ Asian buffet restaurant earlier this year for some family celebration. They had the biggest selection I've ever seen for a buffet, maybe a dozen rows with pretty much anything you'd expect from a China restaurant. But... their premade shit was very bland and prepared in a way / mixed with some stuff that you would feel bloated and fed up after 2-3 dishes. However, my brother knew that restaurant and they had a small corner where you could pick raw meat, veggies and sauces, then have a slave fry them for you on a huge stainless steel plate. Which was okay for the price (with bigger groups you only pay 10 bucks per person plus drinks).

I consider myself a veteran buffet eater. If you go to a buffet eating anything and everything you want, you will inevitably crash early.

If, however, you want to maximize your buffet value there are tips.

1. Skip bready or carb heavy items. They make you fill up quickly.

2. Pick out meats that are typically of high cost.
Example: King Crab > Lobster > Filet Mignon > Ribeye > Shrimp > Pork > Chicken

3. Interweave low carb veggies that compliment the meat. This will help prevent the meat sweats and burnout.

4. Leave any desired bready or carb heavy items for the end, such as desserts.

5. Avoid flavor fatigue by introducing variety.
