the meat is darker than normal freshwater fish
they spend all their time in the muddy bottom of the lake/river. they're not bottom feeders like a carp though. not really sure why but my state lists them as a fish to eat rarely due to pollutants. i'd assume that has some correlation to living on the bottom of lakes/rivers their whole life but not sure.

all that said though, they're good if they come from cold water and aren't large

You're assuming I have cooked it before. I have not, only eaten it at certain restaurants. That seems like the logical thing to do though whether or not the restaurants I've been to do this I don't mind the taste as it's usually not very apparent in the dishes I've ate. If anything it gives it a more unique taste, I like knowing I'm eating catfish.

In case anyone is curious, here's the best seafood to eat for Americans. Since it's for Americans, I've left off some stuff like John Dory and eel, since those can't be found in the US. I compiled this list based on recommendations from both health professionals and chefs on the internet.

>1. Sardines. Fresh is best, but hard to find unless you live on the coast. The canned stuff is god-tier for this reason. Of all canned fish, you should eat sardines.
>2. Oysters. Again fresh best, especially from the Pacific, but canned is god-tier for flyovers.
>3. Atlantic Mackerel. Avoid Spanish, Gulf, and King, as all 3 have insane levels of mercury.
>4. Alaskan Salmon. Must be wild caught and from Alaska. Either red sockeye or pink humpback is okay (Sockeye tastes better and costs more). Avoid any Atlantic salmon.
>5. Alaskan or Pacific Halibut. Avoid Atlantic.
>6. Atlantic Pollock
>7. Spiny (Florida) Lobster. This is the best tasting and healthiest lobster to eat.
>8. Atlantic Herring. This is basically like sardines. The fish are small and don't live long. Pacific herring is too big, so avoid.

>10. Mussels
>11. Red Snapper
>12. Skipjack Tuna. It's smaller than regular tuna. Avoid albacore. Unfortunately, albacore is fucking delicious.

You should be able to find canned sardines, oysters, red salmon, pink salmon, clams, mackerel, and tuna; even in Oklahoma. As far as frozen fish is concerned, I'm not sure. I would think there's some seasonal availability.

Do not eat frozen fish from the store that comes in a box. Avoid tilapia at all costs. Do not eat Chilean sea bass. Swordfish is kinda risky, but if you eat it like once or twice a year, you will probably survive the mercury levels.
