Lemme put it this way: I have a fucked up immune system due to being on transplant meds (immunosuppressants). Been on these shits for 13 years now, eating not only raw beef but raw pork as well all the while and I ain't dead yet. So yeah: it's pretty fucking safe so long as you have access to high quality meat.

If you want to eat raw ground beef for some reason, then you either need an extremely trustworthy butcher who will grind the beef through a clean grinder or buy your own grinder and grind the steak yourself through your own clean grinder. Then you should consume it fairly quickly, because the ground beef is far more exposed to bacteria. This isn't a big deal if you plan on cooking thoroughly, though. I've never had what I suspected to be food poisoning in my life, and I've eaten plenty of steak tartare and blue rare steak as well as medium rare hamburgers (when ground at a good butcher or from a trustworthy restaurant). As long as you aren't buying bottom of the barrel meat that sources from sketchy farms, then the risk is very low.

According to my mother, my grandfather used to eat ground beef raw with salt and pepper while watching t.v. He also died at like 34 from being a rabid alcoholic so make of that what you will. .

I've eaten at plenty of Mexican run restaurants in the US southwest. I spent a month in Mexico living with a distant cousin-in-law and didn't get sick. And the seriously handled food in a way that would give the average American a full on panic attack/meltdown.
