We use a mix of appenzeller and groviera. I added smoked gouda once but at a ratio of 1:2:2 gouda:appenzeller:groviera, I used too much and the smokiness was a bit overwhelming. Would be better with a far smaller ratio, perhaps 1:6 or even as low as 1:8 instead of 1:4 as above.
Don't forget to add mustard. Besides adding a delicious backnote which you would only notice in its absense, mustard's emulsifying properties help prevent the fats from separating.

If you're using a good cheese, that's not really a problem. Most recipes also tell you to add a bit of mustard to the sauce. I also like to add a bit of fresh green onion to the top after it's done cooking sometimes. Some people add stewed tomatoes.

But nothing is stopping you from also adding some broccoli, mushrooms, chicken, etc.

I noticed that recently. I don't like using prepared mustard because of the vinegar, but I ran out of mustard powder and made it without a few times, didn't think it was a big deal. Just recently made a batch with mustard powder again and even though you can't directly taste the mustard, it just tastes better overall.
