i usually put hot sauce but it's more for the vinegar than heat

but sometimes i'll use a homemade sauce that's a modification of a Mission Chinese Food recipe (the chilis here are 200x spicier, first time was an accident but i liked it).

>1 lb thai red chilis (stems remove)
>1 cup of white vinegar
>2"x2" square of kombu
>2 tbs salt
1. Boil all ingredients in a sauce pan for 20 minutes with a lid on. Cool to room temperature before opening.[a]
2. Remove kombu and discard, put the vinegar and chilis in a blender. Blend on LOW[b] until homogeneous.[c]

Notes:
[a] The fumes are lachrymatory and you WILL gas out your kitchen if you open it.
[b] Higher speeds will crack open the seeds making it very bitter and grainy. If you do this, you can recover some sauce by filtering through a coffee filter (very slow).
[c] The polysaccharides in the kombu will make the sauce gel, so the seeds should be suspended in a sauce with a consistency of sambal (chili garlic sauce).

It depends on what mood I'm in. If I'm getting a pizza then its already off to a good start, then start a solo casual drinking game with a bottle of wine on the side while watching Iron Chef. Usually this means a tasty habernaro based sauce in liberal amounts to begin with and then enjoy the rest of the pizzas flavour while riding pain endorphins through the show... good times.
