I found out bones and cartilage were a source of gelatin when I was really young, and for some reason I had assumed that all gelatin came from giraffe bones, so I always imagined that gummy bears and worms were secretly giraffe candies. I loved my giraffe candies.

bones aren't grown out of the ground and the processing equipment for them doesn't take up acres and acres.

gelatin is also used in medical packaging, not just food products.

Obviously I can't. But I've worked with quite a few abattoirs and know they find themselves better off processing blood and bone into fertilizer than they do making gelatin unless they have an exclusive contract with a big company. I can't think of a way to prove that without breaking NDAs, but at least keep that in mind as a possible reality.

say, hypothetically, everyone decided to stop producing gelatin and instead made fertilizer or bulldozed their buildings for gardens. then the price of fertilizer would drop, and the price of gelatin would rise. medical companies still need gelatin for pills and things, so the demand for the product didn't just go away.
do you think it would be economical for at least some of these bone and blood processing firms to switch back to gelatin? if so, what makes you think this balance isn't already taking place in practice?
