Less than well done has this weird gelatinous texture to me. Well done has the meat fibers shred when chewed, which I find more pleasant. I'll admit well done is going to be technically drier than medium-rare, but it doesn't have to be "shoe leather" anymore than a fully cooked chicken breast does.

People who don't like their steak having so much blood should just cook it medium and MAYBE medium well, but medium well to well done is like eating a seasoned shoe IMO. I personally love the juiciness of a medium rare steak and it definitely adds to the flavor and experience. The texture is soft too and not hard to chew. Cooking it medium is still pretty juicy but without the pink/red for the most part which is why I recommend that for the people who can't stand it the pink. I just don't see a point in eating a steak, though, if it's not juicy to some degree. If its cooked to be fucking dry you're doing something wrong.
