Breasts are leaner and have a more elegant teture so I use them in european recipes that have chicken as the main meat and I would use them in japanese if I was making anything japanese with chicken. For everything else I use either boneless chicken leg meat or thighs although I think chicken leg meat is better.

I have found it is cheaper to buy chicken thigh fillets as opposed to bone-on. The bones contribute a lot to the weight, so despite the cheaper per-kg price of bone-on thighs, the per-kg price of edible chicken was higher.

Thighs do have a lot more flavor and fat that creates flavor. But chicken breast can definitely be better in tendies. chicken parm, and other things. Chicken thigh is well understood by most and tastes fine regardless of who buys and prepares it. One isn't necessarily better than the other. I love both!

The reason why people prefer breast meat is because, as stated before, it has the best protein amount per calories and other macronutrients you can get from animals within a reasonable price. When you are trying to build mass or even maintain your muscle mass, you need to hit a high amount of protein without overeating. For example, a typical cut cycle would require ~150g protein and less than 1800 calories daily. Not too mention a low amount of fat and carbs. The solution to accomplish strict requirement is lean meats and poultry, like chicken breast. You can eat a decent amount for only several hundred calories and get a huge chunk of protein macros.
