I love crab. Lobster is wonderful too, but kind of over hyped. Did you know that they used to be so plentiful that they'd use them as prisoner food back in the old old oooooold days? They were considered garbage food once.

You have to get them at the right place and the right time. Unless you live in Louisiana or any of those southern states, the majority of the crawfish you see in grocery stores or buffets are imported garbage from China and are usually cooked in bland and/or chinese seasonings.

If you want to experience real honest to god superior crawfish, then visit New Orleans or any of those southern states around March or April when they are in full season. The spices and the preparation are far FAR superior to anything you're going to find at some Diarrhea Dragon buffet.

You peel them and eat them exactly how you would eat a lobster. They're almost identical, in that sense. If cooked properly, they should be tender and sweet and spicy.

I encourage you to not judge ALL crawfish from just one experience. You've had shitty shrimp in the past, right? It's the same concept. Those shitty shrimp do not represent all shrimp and some places make better than others. Same too for crawfish.

Crawfish taste the way a stagnant water hole smells after it rains. I eat them once in a while, but they're not nearly as magical as Creole culture makes them out to be. The amount of meat in one crawfish is about equal to the size of an M&M, and their bodies are filled with a yellowish liquid membrane that looks like baby shit. A lot of people like the flavor, but I find them to be disgusting little creatures tbqh.

Quality scallops are unbeatable when cooked correctly.
Seafood is amazing, sadly its ridiculously expensive here and usually not up to standards. Jealous as fuck of people who get it fresh and affordable.

there is something special about really fresh shrimp, the stuff you get in stores and restaurants have almost always been frozen at some point and lost a bit of their flavor and texture.

catch some good spot shrimp yourself and cook them up within a few hours in some butter and garlic and you'll see what i mean. they are so much more rich and creamy than rubbery frozen shrimp, ive yet to have anything else come close to what i used to catch with my dad when i was a kid.

All around, I'd say shrimp. The bigger the better. Absolute favorite though is Lobster. Also love crab but there's never enough of it. Langostino gets an honorable mention because it's essentially shrimplobster.... but I've only ever had it once in my enbtire life.

Scallops are also great. The only fish I truly like is slat-cured salmon.
