I really only use a moka pot when buying some latin world coffee, in the mood for a cafe cubano, an afternoon cafecito, a going-out-on-the-town-tonight kind of wakeup coffee. It'll be a weekend mood when and if I have houseguests and I feel like making a cortadito w/steamed milk (microwave a pyrex measuring cup of whole milk).

I will buy supreme bustelo, la llave, even publix brand espresso beans, and I don't think there is a vast difference between them, amazingly enough, they're similar when you get to that level of overroasted dark beans, and as long as you just opened your bag today or yesterday, it's very good. Cuban coffees have a silky sweet amount of sugar. I use demerara sugar. Some people actually add a little hot coffee to the cup with the sugar and vigoriously combine it until dissolved and then add the rest of the hot coffee. Walk up windows all over Miami actually add the sugar to the brew cup. I don't live in Miami anymore, so the moka pot is actually more authentic tasting than my Krups espresso machine, and crazy easy to prep and clean.

Why is it that when I brew freshly ground beans, my coffee always comes out sour? I use a moka pot, and it doesn't matter if I have it ground fine or medium, it's always sour. Cheaper mills like the Hario Skerton can only do a fine grind well. If you set the burr to a coarse grind it starts to wobble and produce an uneven grind.
You can install a supporting bracket to stabilize it, but you have to take it out again if you want to switch back to fine grind.
$500 is only if you want to buy like an actual commercial grade grinder and make turkish grind all day every day without failure.

Espresso is really more hobbyist tier so there is additional knowledge but it really mostly revolves around producing consistent good results by using appropriate properly maintained tools. The espresso machine is essentially a pump boiler and dispenser system so it needs occasional attention to ensure it's performing its functions optimally.

The first four hours were restless, I woke up like times times
But after midnight I slept for a long stretch, waking up at 7. Then I enjoyed a comfy snooze til 8.
So 8pm-8am. I was hoping for 7-7, but this is good enough. I have lots to do today, I hope I can do as much of it as possible, tire myself out and go to sleep around 11/12, wake up 7/8am and keep this good cycle.

That's due to their aluminium construction. They need to be treated and stored properly. It's not difficult, but if you cannot be bothered, get a Bialetti stainless steel moka pot. Note that they come in various cup sizes. 1 cup equals about 60ml of coffee.

For stainless steel, Bialetti have the Venus and Kitty. I have the 4 cup Venus. Works great.

I haven't had a regular sleep pattern in over 5 years now. I think something broke inside of me. I just continuously sleep later and later and wake up later and later. E.g. Sleep at 12midnight to 9am, then slowly creeps to 3am to 12pm, then it's 6am to 3pm. Eventually it reaches back to 12mn to 9am again and the cycle continues. Note that the average cycle happens over a period of 1-2 months. I guess it doesn't help that I'm a friendless, single neet with no responsibilities.

even as a neet, having a regular sleep cycle feels good. getting up early and enjoying daylight hours is good. daylight gives you energy. dark hours make you generally mroe lethargic. Have you thought about exercise? Daily cardio used to do wonders for me. When I did cardio daily, my sleep cycle was regular, effortlessly. it would make me just tired enough to go to bed at the right time. I would never stay up too long and push my cycle back, the way you're talking about. Unfortunately I'm stuck home with health problems these days and can't do any exercise like I used to. I hope to recover and get back to real life if not by the end of 2019 then hopefully within 12 months.

You could even watch your chinese cartoons while on using an exercise bike.

It tastes like burnt asshole. You can't discern any flavor notes that are present in V60 coffee. I even did it properly by using hot water in the chamber and taking it off the heat once it bubbles, and it still tasted yucky.

I used thai tea in my steel bialetti a few times. Thai tea is normally a mix of black tea, star anise and vanilla, and when it goes through my bialetti I end up extracting a lot more vanilla flavour from it that makes the resulting brew taste beautiful.
