I've been going there regularly for over the better part of two decades and have never eaten anything other than the cheese fries, aside from the occasional shared appetizer (bloomin' onion is overrated, texas roadhouse does it better) ordered by a tablemate.

They're so damn perfect. I fast all day in anticipation. I wish I could get them to go but it's pointless because the cheese hardens and the fries start to get soggy when they sit in the container. What was an 11/10 meal when fresh becomes one that's practically inedible by the time you bring it home.

The really amazing thing about Outback is the amount of effort that goes in to some items and the complete lack of effort in others. Something like the mashed potatoes are actually made fresh every day with real potatoes and takes a while, vs their Alice Springs chicken which is just a chicken breast with microwaved cheese on it for $13.

I trust that you're telling the truth about the Outback you worked at, but that's definitely not the case for any of the ones I've eaten at (which admittedly isn't that many: probably about six or seven between Pennsylvania, New Jersey, and Massachusetts).
Unless Outback fries are made of literal magic it's completely impossible for them come out of the microwave that fresh and crispy and they sure as fuck wouldn't hold up so well under cheddar jack cheese. I've tried reheating the fries in the microwave (just fall apart when pulled) and in the oven (cheese remelts fine but the fries get dry on the outside and tough and rubbery on the inside) and in both cases they're irredeemable compared to when fresh.

The closest I've come to recreating them at home is by double frying 3/8 inch russet slices in peanut oil and then going straight from the fryer into the oven at 425 for 6 minutes to melt the cheese. They're nearly indistinguishable from the Outback ones in texture but I haven't been able to get the seasoning perfect yet. I use salt, pepper, garlic powder, and thyme - the taste test says it's not far off but something's still missing from that restaurant flavor.
In your experience do you know what that might be? MSG maybe?
Also I never even bothered to try making the ranch they serve with them because it's so different from real ranch and I've never had anything similar enough to compare it to. Any help with that would be appreciated too.

their steaks are absolute SHIT. ordered a filet mignon medium once and it came out well done and as flat as konata's tits. sent it back and the faggot said they "press them down" with a weight if you order them anything over medium rare. i've always ordered them that way and never had any other "steak house" do something so retarded in my life. even when they cook them properly they're still mediocre.
i do have to admit the alice spring chicken is nice. im not sure why outback is so pupular but it looks like the bar food is the main appeal. blooming onion is not bad, im a big fan of the "tassies" chicken strips, and i agree that the aussie cheese fries are fucking phenomenal, but also a heart attack waiting to happen.

5/10 some good food but as a self proclaimed steak house it's ok at best. i like a good steak more than anything and every time i got brave enough to order one it disappointed.

Sorry, what I was trying to say was they fry the fries then just throw all the shit on top and nuke it. The fries are fresh yeah, but you could come really close to replicating that at home.

Maybe it was just the one I worked at, but honest they just microwaved the cheese. They didnt have the time or patience to use a broiler
