How do I know when sauerkraut goes bad? Or does it not go bad? The expiration is smudged. It's been opened (lid on though) and in my fridge for 5 months.

As a fermented product, it has "gone bad" at the factory. It simply has done so in a way that tastes good. Hopefully the rot and bacteria that taste good will be able to overpower whatever other baddies jump in when you open the lid.
Continue to enjoy it until it tastes funny or you unexpectedly get botulism.

It depends if it was raw or pasteurized. Raw sauerkraut stays good for a long time and can probably eaten as long as it doesn't smell foul or get moldy. The stuff you buy unrefrigerated will spoil a lot faster once opened since it doesn't have all the good bacteria keeping it fresh. So if it was bought in the refrigerated section and it smells/looks okay, it's probably fine. If it was bought unrefrigerated, just throw it out, I wouldn't eat that stuff after a week of being opened.

Look for mold, and smell it. As long as you've used clean forks then it could be just fine. I keep condiments forever, and it lasts a pretty long time. I usually have it for a few months, but make an active attempt at using it before 3. I hate kimchi so I use it instead with rice dishes, brats, and just as a snack.

The first study in the other post also says GF mice need to eat more to maintain the same bodyweight, so if the GF and SPF mice were being fed the same amount, the GF mice would be at a lower bodyweight which is also associated with an increased lifespan. It's more complicated than just "bacteria in your system make you die sooner".

I think the data is best explained by the effect of endotoxin. germ-free mice should have a near absence of endotoxin, which is a major factor in aging and insulin resistance. calorie restriction also achieves a reduction in endotoxin. this could explain why gf mice didn't live longer when both groups were calorie-restricted
