100% depends on the dish and preparation method.
I usually have canola oil or peanut oil (neutral oil with high smoke point for searing etc), butter, a few rendered animal fats (usually chicken fat, pork and/or bacon fat, beef fat), butter, and maybe a semi-ok olive oil that I use for cooking. Oils with delicate flavors or that aren't very heat stable (good olive oil, good sesame oil, hazelnut oil, pumpkinseed oil etc) are used for flavoring at the end, or for uncooked applications.

Butter is still burning even if you mix it with oil. It doesn't actually increase the smoke point, the only thing it does is dilute the burned butter. You should make clarified butter or ghee if you're going to do higher temperature cooking.

Whatever rendered fat I've been able to collect from something. There's something special and comfy about reusing that part of the earlier dish, it's like a continuation of your eating and cooking experience. The dish you make with the fat might taste a little different from normal if it's a flavorful fat, like bacon grease, but that's fine, it tastes like it came from your kitchen, and that's nice.

the oil might absorb some of the heat so the butter doesn't burn as fast, but yeah the butter will still burn. Clarifying butter removes the milk solids from butter that have a lower smoke point, making it a good fat to use on high heat.

Think of it this way, if you add sugar to water it can still come to a boil and evaporate, but that boiling point might be just a bit different now.
