Curry comes from the word cuori. Means hearty. To some people it means a hearty spice but to me its a guinea pig. As to why it’s called cuori because it’s used in lab testing. The most sacrificed of all animals. So a dish better than curry would be an iskander kebob or tradition goat stew.

My favourites are jalfrezi (tomato based with lots of onion and julienned green chillis), madras (similar but minus the chillis – still hot though) and dhansak (lots of lentils, cooked for a while so they break down to give a think sauce).

You have to make it yourself or befriend a nice Indian family who will invite you over. Restaurants tone it down for white people. It’s all down to taste really. Hard to say what the best curry is. Sri Lankan food is also really nice.

I am Indian so it’s probably why I hate curry from reataurants. I’m from the south so I actually like stuff like Vindaloo since it’s a nice change of pace, though I prefer lamb since the chicken there is always really tough.
