One of my favorite ways to eat shrimp is pic related: a Vietnamese green mango salad, or goi xaoi.
Julienne unripe green mangoes, cucumber, and carrot. Soak in rice wine vinegar, sugar, salt, water, lime.
Chiffonade a combination of thai basil, mint, and cilantro.
My peanuts are chili-crusted in the photo, but you can use regular toasted and crushed peanuts.
Assemble the pickles, herbs, peanuts, and some steamed shrimp in a bowl, and drizzle with a classic Viet style fish-based chili sauce.

After I posted that I remembered that I actually didn't marinate them in vinegar, but rather put the prepared sauce (fish sauce, lime, chili, water, sugar) directly on the vegetables and kept them that way. Either way, they're lightly pickly and 10/10.
