You'd be surprised. We have a decent sized prep team, and during service it's just four cooks and the chef on the line. Only three stations, and just one has two people on it. A lot of the more involved tedious things get done by the prep team.

I use a carbon steel knife I should take better care of, but you can't beat it as long as you keep it sharp. I also have a stainless tojiro, not the best, pretty far from the worst and it was cheap. You know what's a meme? Multiple knives. Definitely keep a boning knife for fish, a chef's knife and a pairing knife, but you really don't need much else. Like, get good faggot. You don't need a cleaver.
I'm going to completely contradict myself here and say every cook should own a berineir mandolin. They're thirty bucks, no excuse to borrow mine every time you need it.

I really like Peter Luger...s burger. I haven't had the steak. I know what goes into it is phenomenal. They have a dry age room, pictures don't do justice. The burger is made from the oxidized aged trim . It's great. I've only had one better burger and I was far more intoxicated and it was made in the same manner.
