Brown 1 pound of it in a large saucepan, drain the fat, season with salt, pepper, garlic, oregano, parsley, basil, anise, and paprika. Add a diced onion, a diced carrot, and a diced stalk of celery. Cook on low for a short time before adding a can tomato paste and a can of crushed tomatoes. Stir it all together, adding water if needed, and simmer while stirring occasionally for 30 minutes to an hour. Serve over your favorite pasta.
