I don't know about America but in England, Caribbean black food is pretty good and quite oily and spicy. So they compare that to their white next-door neighbour's food, who is cooking something like frozen breaded fish/chicken fillets, frozen chips, frozen peas, baked beans, ready meals etc. and they think, wow white people don't know about food. And there is truth in it because working class white people somehow lost the ability to cook and lost all their traditional recipes, instead chasing whatever new fashionable foreign food is in vogue. It's as though cooking traditional budget food became unfashionable. Obviously it's not that all black households have excellent cooks but I think that they, at least when I was growing up, retained some of their traditional stuff whilst the white people shunned a lot of theirs.

I meant to convey that it's common for whites to use milder condiments and seasonings. Plenty of whites, poor or otherwise, use hot sauce and enjoy spicy foods, too, but there is definitely truth in the idea that white people don't spice the ever living hell out of every meal. And that many white people who like spicy foods are not used to the level of heat in things like Indian food and other very spicy foods. The meme is clearly an exaggeration that pokes fun at these trends, but I do know people who can't even eat foods seasoned with cracked pepper, all of whom are white. A lot of northern americans don't use a lot of spice in their food. I've known some people to call Black Pepper as "spicy". (Like, really?)

A lot of mid westerns are from Scandinavian backgrounds and they're known to have potato and cream-based bland foods. When they go down to the southern states, they usually get their tongues rocked out of their skulls from the massive amount of herbs and spices and sauces that most of the food is cooked or covered in. I moved from Tennessee to Minnesota and made friends and blew them all away with their first experience with sriracha. None of them could handle more than a tiny drop. It was cute and pathetic.

I know people like that with the black pepper, my mother is kind of like that. Her favourite food is plain steamed vegetables, I think it's because when she was small her family had little money so they practically lived off the vegetables they grew themselves, I think it's her comfort food.

I remember being 11 or 12 and trying tomato salsa dip with tortilla chips, getting the mild hot one and feeling the chilli. Today if I get the hot salsa it's not even hot for me. Spiciness gets easier, you build up a tolerance for it.
