I googled to know what was that red liquid that comes out of steak meat when it's cooked

One source says it's myoglobin

Another source says it's interstitial liquid

Myoglobin is inside muscle cells. Compare myoglobin to hemaglobin, which is inside red blood cells. So picture a muscle. It's made up of cells. Inside those cells there's a lot of things like mitochondria and different proteins, etc. There's also myoglobin.

Water moisture that occurs in between the muscle fibers is the interstitial fluid. If you've ever heard of "you're made up of 98% water", this is what people are referring to (it's more like 60% btw).

Myoglobin is in the cells. The cells are sitting in interstitial fluid. Myoglobin is diffused from the cells into the interstitial fluid by oxidation. So just exposing muscle to air causes the watery moisture to pick up the red color.
