Dude Tabasco is nothing more then a heat level enhancer when you want to pair rich foods with spicy foods. It's very strong in vinegar flavor.
There is a cocktail known mostly in Canada called the "Caesar" it has Worcestershire sauce, clamato juice, salted rim, and calls for dashes of Tabasco, you can barely taste the vinegar but the heat is there, that's because the tomato and savory flavor of the Worcestershire cut well with the vinegar.

If anybody wanted to add heat without flavor they wouldn't use fermented vinegar sauce in the first place. They'd find the hottest pepper powder possible and put as many tiny little sprinkles of demon powder into their food as they wanted to make it hot. By merit of volume alone it cannot change the texture, consistency, or flavor of the food beyond adding heat.

People use vinegar sauce because it tastes good and imparts a good flavor to the food. Especially when the food is shit and you just want to cover it up and make it palatable.

If you can add dashes of vinegar and heat into a dish to cut down on the savory aspects it's much more convenient to do that compared to adding the ingredients of fresh or dried spices and trying to match it with vinegar.

That sounds like an incomplete mexican clamato. Mexican clamato is lime, maggi sauce, worcestershire and valentina (can be substituted by tabasco), with salt rim. This otoh is the same sauce used for Michelada, which is beer with the same sauce, with or without clamato.
