Yes. They often gain a reputation as "nigger fish" due to their bottom dwelling nature, the fact they can often be caught shoreside and probably their wide mouth appearance but they are great under certain conditions. First they should be 10-20lbs in size max, bigger cats tend to scavenge whatever the fuck and are less predatory. Second they are better from deeper, salty waters. Basically you don't want a fat neckbeard fish thats been wallowing in 3ft of water eating mud and decaying crap.

Depends on where you live. River striper and ocean rockfish are both very good. Steelhead is also good and so is trout. Bacalhau is fucking dank but I don't know much about cod populations.

Yeah, they're very easy to clean and if you fishes more than you can eat in one go you can keep them alive in a big tub with goldfish pellets.

Japanese nimono style koi, like red braising but with more sugar and no five-spice or fermented tofu/bean paste. Miso ni has fermented bean paste.

Yamagata also has specialty which is like nimono but you use slices of the whole carp, guts and all. I imagine it only tastes good with carp especially raised for this purpose. The roe is a highlight here.
