Here's your 1-100 panee trickery guide
use fine, dry flour, and dredge each piece fully, tossing gently to remove excess
apply eggwash; this is a fiddly bit as you want to ensure total coverage. Just turn it and then drain lightly before
paneeing in bonedry crumbs (panko is wonderful), removing wet lumps and all that, and pressing the panee into your fish gently
