How do I progress beyond the level of just mindlessly following random recipes on the internet and become more of a self sufficient cook?

just look at the ingredients list and then work the rest out through trial and error. eventually through practice you will become a great cook

try reading serious eats as with their recipes they go into detail about the techniques and why they work

so if you learn one recipe you can easily adapt the technique to cook different food

also, taste while you're cooking and adjust to taste.

eating like a mexican is an easy way to feed yourself, mix any of the above and then you're eating real food instead of asking yourself where you went wrong.
