I bought a calzone over the weekend and inside was like 20% mozz and 80% nasty ass ricotta. Are they supposed to be that way? It made a huge fucking mess trying to eat it. The buff chicken was also weak af, but that's another topic. And no, it's not a pizza that's why it's called calzone and not pizza.

Ricotta is fine I guess but not anywhere near that much. It was like they got confused and started trying to make lasagna halfway through. I suspect it's because the ricotta is cheaper than good mozz like they should have used. I'm a guy btw ;-)

(I've been to an official Calzone, and it's pizza, but they seem to be really cheap.)

The Calzone is made of pizza crust (from a single pizza cart) and a layer of cheese on top that's supposed to be just crunchy. That cheese is usually red, the sort you see in hot dog stands as they prepare the bun with it. You'll usually see a layer of fresh mozzarella on this crust, but it's a relatively big piece, sometimes twice as big as the other crusts and you'll get a really deep texture with each bite.

So what is there in a Calzone? As far as I can tell there aren't many specifics, but there are more than a few things that seem to make it the pizza

To be very clear, Calzone is not a "pizzeria", as they call it. The first thing I learned about Calzone during my visit was the fact that I had no idea what "pizza" is. Sure, you see a few pictures in the newspaper of the two pizza places they opened in Chicago, California, and New York City, but when you hear the name "pizza" used to refer to someplace else, it's a bit misleading. The definition of pizza states that the topping has a crust made of dough, usually, but sometimes crusts make up the whole thing, in which case it is probably a pizza. Calzone's pie crust is crustless, which sounds great and all, right? Well, not really, though I've seen people talk about a great bread crust and I suppose that's kind of an oxymoron. What I mean is that, while they do use bread that has been made in a special way and then rolled out before it is baked, most pizza places that use bread that is "raised" don't tend to have a great deal of the flavor of actual dough. Calzone pizza, on the other hand, is filled with a combination of ingredients, in the form of ground beef, cheese, breadcrumbs, and tomato sauce.
