Ok. So, for an easy, tasty option, I'd do roasted. Here's how I do mine.
>wash potatoes well
>bring pot of salted water to a boil
>add potatoes and boil for ten minutes (this parboils the potatoes and makes the roasting go faster and the potatoes crisper.
>Let potatoes cool enough to handle and cut into quarters or halves (depending on the size of the potatoes)
>toss potatoes with oil of your choice, salt, pepper, and herbs of your choice
>put on baking sheet or pan
>sprinkle potatoes with a little extra seasoning
>roast at 425F for 20-30 minutes
