Technically, yes it's cheese, even American cheese. You can tell what's not cheese in America because the package doesn't call it cheese, but those packages are not American cheese they are usually just some shit that's made so immigrants can afford to have cheese substitutes, kind of like vegans.

A good quality slice of American is nothing more but processed cheddar cheese. It can't legally be called "cheese" but its still very much cheese.
Anything cheaper than that is more filler than it is cheddar, that's where you get the fucked up rubbery weird shit that's no good.
Good American cheese should melt into a cheese whiz consistency, and is perfectly acceptable for applications requiring mild, melty cheese.

My favorite cheeses are romano, aged cheddar and aged gouda

I love smoked gouda, soft and hard goat cheese, fresh mozzarella, brie, St. Felicien, and any stinky french cheese. I haven't found many cheeses that I don't like. I don't care for them to be overly salty. I'm not the biggest fan of cheddar cheeses, but I'd be willing to change my mind if I had some really good quality fresh cheddar if there's a big difference between that and what I've tried.
