I'm making "Korean inspired" meatballs.

>1 1/2 lb ground beef
>1 egg
>1/3 cup fresh chopped cilantro
>2 teaspoons onion powder
>4 tablespoons chili sauce
>1/4 cup peach or apricot jelly
>1 tablespoon soy sauce
>3 tablespoons rice vinegar
>1 tablespoon fresh ginger
>1 teaspoons cornstarch
>sesame seeds

Set oven to 420 F. Mix ground beef, egg and cilantro in a bowl. I ran out fresh so I used some dried as well. Once the mixture is uniform, roll into small ~1.5" meatballs and set on a foil-lined baking sheet.

Forgot to say the onion powder goes in as well.

Put the meatballs in the oven to bake for 6-8 minutes. While that's happening, make the sauce. Grate your ginger, mix your cornstarch with some cold water, and mix those with chili sauce, jelly, soy sauce and rice vinegar in a large pan. Set the pan to low-medium heat and stir until the sauce thickens.

I thought my meatballs looked a little dull so I also broiled them for a minute or two to brown the tops. Add your meatballs to your sauce and fold everything together. Mine had some fatty residue on them which I didn't take away and it made for a sort of ugly looking sauce, so I'd recommend you skim that off before putting them in the sauce.
