I'm making enchiladas for dinner. Chicken enchiladas, and then I have some leftover chile verde that I'm going to mix with some green enchilada sauce to use as the sauce, and going to put some asadero cheese on top. Going to serve them with rice, beans, guacamole and chips.

When I was in college one of my gay friends used to call it "West Hollywood chicken", so that's what I always call it.

Anyway, I'm just going to make a simple pasta for dinner, not sure what kind yet. I'll be getting home late, so nothing too complicated. But this weekend I'll be manning the smoker with some pork ribs and probably some other meat too, but I haven't decided what.
