I make baozi a lot. Even when they don't seal properly, they still come out looking pretty good. They're not too bad to make - the dough's a fairly basic bread recipe really - equal-ish weights of water and wheat flour, with some salt and oil. I throw in a little cornstarch for stretch. The filling's fairly whatever - pork, leek/scallion/green onion, garlic, ginger, cabbage if you want, carrot if you want, a little five spice if that's what you're feeling, maybe some mustard powder and sichuan peppercorn if you're not. A little bit of soup-gelatin, fat, or cornstarch to help it gel. Spoon 'er in, wrap 'er up, and steam the biznitches.

They take a while, but they aren't super labour intensive, and you can overcook them by quite a bit before anything bad happens.

yeast. I forgot yeast. The water must be warm. A little sugar won't hurt. Gotta let it bloom, gotta let the dough rise. It's time consuming, but the yeast, steam, and food processor do most of the work.
