I have eaten many squirrels. There are lots of good ways to cook them. Before that though make sure you get them cleaned up good, i always make sure to remove the musk glands near the ass and then I focus on removing any gobs of fat in the armpits or inside of the hip joint. I usually part mine out in half (perpendicular to the spine), and then split into two shoulders, two hams, and a rib section. Hearts and livers are good eating as an appetizer. The shoulders will cook faster then the hams so dont overcook them if you are grilling/roasting/frying.

Make sure the animal is not in rigor when you eat it, i will let my cleaned squirrels sit on a rack in my mini fridge for 24-48 hours so the meat will settle. If you are worried about “gamey-ness”, i would recommend a simple salt/sugar brine.

As far as cooking methods, anything will work. Some of my favorites are slow cooking in a crockpot, pan frying or deep frying, grilling, smoking, oven roasted, cooked on the campfire, etc. There can be a tremendous variability in tenderness between squirrels, probably related to age. I recommend a slow cook for obviously older ones, the young ones are great for a hotter/faster method. When properly cooked the younger/mid age ones will pull off the bone like good cooked poultry. The flavor is somewhat unique and generally mild (somewhere between an ungulate red meat and poultry maybe?), its cliche but I would probably compare it to a more flavorful dark meat on chicken. Check out Steve Rinellas wild game cookbook for some specific recipe ideas. If you give the meat the care it deserves and try it with an open mind, squirrel meat is great and readily accesible in many areas

Actually yes. I shot one in my backyard a few years ago and grilled it. It was good. It's the only mammal that I've gutted and I didn't do a great job getting the hair off of it but overall it was a good experience.
