I add very little salt to the soup until near the end of it's simmering time. The fish sauce and broth has a lot of salt, so to avoid oversalting I just wait until it's been reduced.

I also made soup. In the microwave.

For 1 serving:
water, for blanching, as needed
tomatoes, preferably plum-shaped, 100g
ice water, for shocking, as needed
olive oil, 20ml
paprika, nobel sweet type, as needed
paprika, smoke-dried pungent type, as needed
celery, vegetable type, 75g
celery, herb type, 25g
carrots, peeled and cut, 100g
onion, peeled, cored and cut, 100g
broth or stock of your choice, 500ml
salt, to taste
potato, peeled and cut, 200g

Put water into microwave-safe container and nuke until boiling; meanwhile, score the tomatoes.
Place tomatoes into boiling water and nuke 1 minute.
Drain tomatoes and shock in ice water.
Peel and crush tomatoes in microwave safe container then add oil.
Nuke 3 minutes.
Add paprika, celery, carrots, onion, broth and salt then nuke 6 minutes.
Add potatoes and nuke 6 more minutes.
Let rest three minutes or so, then eat.

Used to do this in college and still do from time to time. Is good.

I buy big ass bags of peeled garlic from Sam's Club. I use a lot of roasted garlic. I take a Pyrex measuring cup and fill it with garlic cloves. Fill with olive oil until garlic is covered. Put the whole thing is the oven at 400 for 35 minutes. Put the now roasted garlic in a container and dump the oil into a bottle I have specifically for that.
