It’s nutritious and crisp, but has a slightly musky taste that some find unpleasant. The savory flavors really come out when you cook it, so be sure to balance that with some sweet, sour, or spicy ingredients. Germans turn it into kraut which is great for adding crisp texture and acidity to dishes. Koreans turn it into kimchi which is basically Asian kraut with a slightly different fermentation and hot peppers added in. The result is similar to kraut, but the brine fizzes like beer and it’s spicy as hell. Oddly enough it’s great on tacos. The Irish and Eastern Europeans tend to just boil the stuff with salt which is pretty bland and can get stinky when overcooked. However the Russians and other Slavkin do like to make borscht with cabbage which is a vast improvement on account of the sweetness of the beets and the tang of dill.

Only thing I like to do with cabbage is sauerkraut
>weight and chop up cabbage into strands
>crush a few cloves of garlic and add into the bowl
>put into a big bowl and weight out 10g of salt for every pound of cabbage
>sprinkle some of the salt and massage it to break it up a little bit
>wait ~15 minutes and massage it again, add more salt
>wait ~15 more minutes and massage the fuck out of it again
>stuff it into the jar and add some more water and leave out in cool room in the dark for a couple of weeks
>enjoy some delicious probiotic sauerkraut
