If you're making a white wine sauce, it's essential. If you're adding some to the end of a clear soup, yes absolefuckinglutely. If you're stewing with it, I've given people grape juice with white cleaning vinegar and they think it's high end.

Yeah, if you're just using a small amount it's just dumb. People are going to notice you tampering with beef bourgenoun, but no one will notice if you deglized with something else if you're making a stew or braising sauce so long as you sub in something appropriate; you're cooking long enough to destroy anything that makes it good wine.
